  • 1 cup unsweetened almond milk (or your preferred milk alternative)
  • 1/2 cup cherry or pomegranate juice (preferably 100% juice with no added sugars)
  • 2 shots Seattle Elderberry Maple Syrup
  • 1 cup frozen strawberries
  • 1 tablespoon honey or maple syrup (optional, for added sweetness)

Combine Ingredients in the Pint:

Pour the strawberry purée into the Ninja Creami pint container. Add the almond milk, cherry juice, and Seattle Elderberry Honey Syrup, directly into the pint.

Mix Thoroughly:

Stir the contents of the pint container with a spoon until all the ingredients are well combined. Make sure the strawberry purée is evenly distributed throughout the liquid mixture.

Freeze the Mixture:

Secure the lid on the pint container and place it in the freezer for 24 hours, following the Ninja Creami's instructions.

Place in the Ninja Creami:

Once the mixture is frozen (12- 24 hours), insert the pint container into the Ninja Creami machine. Select the “Lite Ice Cream” function. If the texture is too crumbly after the first churn, add in a splash of almond milk and use the “Re-spin” function for a creamier consistency.

Serve and Enjoy:

Scoop your elderberry ice cream into bowls or cones. You can add more strawberries or your favorite topping to the top! We love using coconut flakes on top!

Combining the sweet and tart flavors of cherry juice and strawberries with the unique taste of Seattle Elderberry honey syrup, creates a refreshing frozen treat. Using almond milk as a base adds a smooth, creamy texture while keeping it dairy-free. The addition of elderberry syrup not only sweetens the mixture naturally but also infuses it with antioxidants and immune-boosting properties, making this dessert both delicious and health-conscious!

Can I use fresh strawberries instead of frozen strawberries for the purée?

Yes, you can use fresh strawberries instead of frozen ones. However, using frozen strawberries helps create a thicker purée, which can lead to a creamier texture in your final ice cream. If you use fresh strawberries, consider freezing the purée before mixing it with the other ingredients to achieve a similar texture

Can I substitute the cherry juice with another type of juice?

Absolutely! While cherry juice adds a unique tartness that complements the elderberry syrup and strawberries, you can use other juices like pomegranate, cranberry, or even blueberry juice for different flavor profiles. Just make sure the juice you choose is 100% juice without added sugars for the best results.

Is there an alternative to almond milk for a nut-free version?

Yes, if you prefer a nut-free version, you can substitute almond milk with other milk alternatives such as oat milk, soy milk, coconut milk, or even regular dairy milk if you're not avoiding dairy. Each type of milk will impart a slightly different texture and flavor, so choose according to your dietary needs and taste preferences.

How long should I freeze the mixture before processing it in the Ninja Creami?

The mixture should be frozen for at least 12 hours to ensure it is solid enough for the Ninja Creami machine to churn into a smooth, creamy consistency. Freezing it for a full day helps the machine achieve the best texture and prevents any liquid pockets in the ice cream.

What if my ice cream turns out too crumbly or icy?

If your ice cream is too crumbly or icy after the first spin, use the Ninja Creami’s “Re-spin” function. This setting helps smooth out the texture and makes the ice cream creamier. You can repeat this process until you reach your desired consistency.

Can I add mix-ins to this recipe?

Definitely! Feel free to get creative with mix-ins like chocolate chips, chopped nuts, coconut flakes, or even more fresh fruit. Just be sure to add any mix-ins after the initial spin in the Ninja Creami to avoid them sinking to the bottom of the pint during the freezing process.
