Directions

Prepare the Cupcake Liners:

  • Line a muffin tin with 12 cupcake liners.

Melt the Chocolate:

  • In a microwave-safe bowl, melt the chocolate chips & coconut oil in 20-30-second intervals, stirring until smooth and fully melted.

  • Spoon about 1 teaspoon of melted chocolate into the bottom of each cupcake liner. Spread it slightly to cover the bottom evenly.

*Place chocolate cupcake liner into the freezer while you make your mix to harden *

Prepare the Yogurt Mixture:

  • In a mixing bowl, combine the Greek yogurt, elderberry syrup, maple syrup, and vanilla extract (if using). Stir until well mixed.

Assemble the Cups:

  • Spoon the yogurt mixture over the chocolate layer in each cupcake liner, filling it about 3/4 full.

  • Gently tap the muffin tin on the counter to remove any air bubbles and to level the yogurt.

Add the Berries:

  • Top each yogurt cup with a few mixed berries. Press them slightly into the yogurt.

Freeze:

Place the muffin tin in the freezer and freeze for at least 2-3 hours, or until the yogurt cups are completely firm.

Serve:

  • Once frozen, remove the yogurt cups from the muffin tin and peel off the cupcake liners.

  • Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
